Free radicals are unstable oxygen atoms which have lost one electron. They become free radicals and attack the nearest atom in the cell to acquire the electron and in the process creating more free radicals. This may lead to a chain reaction. Overview
Calcium and magnesium play a key role in the development and maintenance of bones, along with other essential functions. Together, these minerals share a relationship that is complementary and, under certain conditions, competing. Understanding their side effects is useful in understanding how you can use these minerals individually and collectively to optimize the functions and overall condition of your body.
Calcium and Magnesium: A Balancing Act
Magnesium is needed to metabolize calcium, so it must be present in your body in adequate amounts. Given this mutually dependent relationship, it is key to have an appropriate ratio of both minerals for them to be effective. If your calcium intake is high, your magnesium intake needs to be adjusted proportionately. The recommended daily allowance for calcium and magnesium indicate a ratio ranging from approximately 2.5-to-1 to 4-to-1 calcium to magnesium, depending upon one’s age and sex.
Recommended Daily Allowances Calcium and Magnesium
As of 2014, the recommended daily allowance, or RDA, for magnesium is as 255 to 265 milligrams for women, and 330 to 350 milligrams for men. The RDA for calcium is 800 milligrams for women up through 50 years of age, and 1,000 milligrams for women over 50. Calcium RDA for min is 800 milligrams. These recommendations are set by the Food and Nutrition Board of the Institute of Medicine. Note that you do not need to take magnesium and calcium in the same supplement for your body to absorb calcium. The minerals, though, must each be present in the body in adequate amounts in order for you to use the calcium.


Side Effects: Too Little, Too Much Calcium
According to the National Institutes of Health, a consistent deficiency of calcium over time may lead to osteoporosis, resulting in brittle or porous bones, or osteomalacia, resulting in soft bones. In children, osteomalacia is referred to as rickets. Conversely, too much calcium in the blood, a condition called hypercalcemia, may negatively impact kidney functions. Symptoms of hypercalcemia include a feeling of numbness/tingling in the fingers, convulsions, vomiting, constipation, cramping of the muscles, an abnormal heart rhythm, lethargy, poor appetite, persistent thirst and fatigue. According to the Linus Pauling Institute's Micronutrient Information Center, no incidences of hypercalcemia have been documented to occur from dietary intake, only from the intake of calcium supplements.

Side Effects: Too Little, Too Much Magnesium
While rare, according to the National Institutes of Health, a severe magnesium deficiency may result in decreased appetite, nausea, vomiting, fatigue, muscle spasms/tremors and personality changes. A severe magnesium deficiency may also result in low levels of calcium in the blood, a condition called hypocalcemia, as well as low levels of potassium in the blood, a condition called hypokalemia.
At the other extreme, the first sign of too much magnesium in the system is diarrhea. Progressive signs of excessive magnesium include changes in mental state, notably confusion; nausea; appetite loss; weakness; difficulty breathing; abdominal cramping; reduced blood pressure, a condition known as hypotension; and an abnormal heart rhythm. Similar to calcium, excessive magnesium is not caused by dietary intake, but from the intake of supplemental magnesium, including laxatives and antacids that contain magnesium.

The Dangers of Raw Milk: Unpasteurized Milk Can Pose a Serious Health Risk

Milk and milk products provide a wealth of nutrition benefits. But raw milk can harbor dangerous microorganisms that can pose serious health risks to you and your family. According to an analysis by the Centers for Disease Control and Prevention (CDC), between 1993 and 2006 more than 1500 people in the United States became sick from drinking raw milk or eating cheese made from raw milk. In addition, CDC reported that unpasteurized milk is 150 times more likely to cause foodborne illness and results in 13 times more hospitalizations than illnesses involving pasteurized dairy products.
Raw milk is milk from cows, sheep, or goats that has not been pasteurized to kill harmful bacteria. This raw, unpasteurized milk can carry dangerous bacteria such as Salmonella, E. coli, and Listeria, which are responsible for causing numerous foodborne illnesses.
These harmful bacteria can seriously affect the health of anyone who drinks raw milk, or eats foods made from raw milk. However, the bacteria in raw milk can be especially dangerous to people with weakened immune systems, older adults, pregnant women, and children. In fact, the CDC analysis found that foodborne illness from raw milk especially affected children and teenagers.

"Pasteurized Milk" Explained

Pasteurization is a process that kills harmful bacteria by heating milk to a specific temperature for a set period of time. First developed by Louis Pasteur in 1864, pasteurization kills harmful organisms responsible for such diseases as listeriosis, typhoid fever, tuberculosis, diphtheria, and brucellosis.
Research shows no meaningful difference in the nutritional values of pasteurized and unpasteurized milk. Pasteurized milk contains low levels of the type of nonpathogenic bacteria that can cause food spoilage, so storing your pasteurized milk in the refrigerator is still important.

碱性食物是“血液和血管的清洁剂”、碱性食物能防癌、碱性食品能美容、消除疲劳、提高智力……近年来,碱性食物健康论广为流传。一时间,市场上出现了大量冠以碱性“标签”的“营养”食品,还有更多的瓶装水以弱碱性水的面目出现。其之所以被人们推崇,是因为有人将人的体质划分为酸碱性,认为碱性体质最健康,酸性体质是百病之源,只有多吃碱性食物,达到碱性体质,人才不会生病。酸酸碱碱,分不清楚。人的体质真的分酸碱吗?碱性食物是不是真的更健康?带着这些问题,记者寻访相关专家,从西医、中医、营养角度为您求证“酸碱论”的真相。
医学上人体质没有酸碱之分
【传言】“酸性体质是百病之源”,“酸性体质会诱发肿瘤,易患癌症”,“健康人的体质是碱性的”,“碱性体质的人智商更高、易生男孩”……
【求证】王桂侠:医学上没有酸碱性体质的说法,但人体的体液可测定酸碱度,其酸碱性强弱程度用“人体酸碱度”来表述,与“酸碱体质”完全不同。人的体液有很多种,包括细胞内液、细胞外液(血液、组织液和淋巴液)、分泌的各种消化液(如唾液、胃酸、肠液、胆汁等)、排泄出的汗液、尿液等等。不同体液有不同酸碱度,并且相差很大,如血液的PH值是在7.35-7.45之间,胃液的PH值在1-2之间,肠液、胰液、唾液等等体液的PH值都维持在各自恒定范围内。各种体液只有维持各自严密的酸碱度,人体才健康。因此,以某一种体液在某一时刻的酸碱度来衡量所谓体质的酸碱性是不科学的。也就是说,人的酸碱性体质之说是不科学的,各器官需要的环境不一样,酸碱度也不同,不能一概而论。所以传言所说的情况是根本不存在的。
张焱:中医学理论中并不存在“酸碱体质”一说。现代有中医学者研究,提出将人的体质分为阳虚、痰湿、气郁等9种体质,其实,这种分法也是属于中医的辨证归类范畴。在中医看来,只有“阴平阳秘”的“平人”才是气血平和的健康无病之人,凡阴虚、阳虚、气郁、血瘀等均是阴阳失衡、气血不和的疾病状态,需要及早发现并辨证治疗,以防止疾病进一步发展与改变,所以中医重视治疗已发疾病,更重视“治未病”。治未病,包括未病先防和已病防变两个主要方面。因此,中医这种体质分法需要经过医生的“望闻问切”,再结合科学测评才能给出定论。所谓的酸碱体质,不是中医体质辨识学提出来的概念。
致病与“酸性体质”无关
【传言】网上广泛传播着一些“酸性体质”会致病的说法:“酸性体质会诱发肿瘤”、“酸性体质人群极易出现酸中毒现象”……
【求证】王桂侠:事实上,并不是“酸性体质”这个“恶因”诱发了肿瘤,而是肿瘤的生长会导致实体瘤周边的微环境变酸,这种说法乃因果倒置。
实体肿瘤周围微环境的PH值的确比正常组织和器官要低。这是因为肿瘤细胞比正常细胞生长快,而肿瘤组织中血管的供应往往跟不上肿瘤细胞快速扩增的脚步,供氧和养料不足。因此,肿瘤细胞缺氧又缺养料,新陈代谢也发生了改变,生成了更多的乳酸等酸性代谢产物,使得肿瘤组织周边的组织液PH值较低。
“酸性体质人群极易出现酸中毒现象”的传言也犯了因果倒置的错误。人体血液PH值高于7.45,会出现碱中毒,低于7.35,会出现酸中毒。需要说明的是,并不是所谓的酸性体质导致疾病的发生,而是某些器质性疾病如糖尿病、肾功能衰竭等可能造成酸中毒的出现。
同样,临床上也存在着碱中毒的情况。如因剧烈呕吐和胃液引流导致、低钾血症诱发细胞内碱性物质释放增加等原因诱发的代谢性碱中毒。如中枢病变、肺部疾病、低氧等引起的呼吸性碱中毒。
食物分酸碱性并不科学
【传言】很多网友将食物也按酸碱来划分,碱性食物主要为蔬菜、水果、海藻、坚果等;酸性食物主要是淀粉类、动物性食物、甜食、豆类、精加工食品等。
【求证】王桂侠:关于酸性食物和碱性食物目前尚无明确定义。在食品化学中,目前通行的方法是把食品燃烧后所余灰烬进行化学分析,肉、蛋、谷类、植物油等因含有磷、硫、氯元素较多,灰烬溶于水后生成酸性溶液,故被称为“呈酸性食物”;水果、蔬菜、牛奶、菌藻类等含有较多钾、钠、钙、镁,灰烬溶于水后生成碱性溶液,即被称为“呈碱性食物”。因为食物进入人体后的生物化学变化极为复杂,单纯通过燃烧后的产物或者食物本身的pH值来判断食物酸碱性是不够科学严谨的。以牛奶为例,钙离子燃烧后的灰烬,遇水生成氢氧化物,是强碱。可是进入人体后,90%以上的钙都是以固体形式存在,碱性无法体现。同理,肉类属“呈酸性食物”,其主要营养成分是蛋白质,蛋白质中的氮元素在我们体内则大部分以氨基酸的形式存在,并且是很多生物碱的中心原子,那么在体内它可以起到提高pH值的作用。也就是说,肉本身是酸性的,但多数进入体内的酸性很小,甚至变为碱性。
另外,判断食物的酸碱性不能简单靠PH试剂或口感味觉,如醋、苹果、柠檬等酸味食物就不是“呈酸性食物”。食物进入人体后经过消化、吸收等一系列复杂的代谢过程,形成产物的酸碱度与摄入食物的酸碱性没有直接关系。人体存在完善的缓冲及调节系统来维持体内的酸碱平衡,一般不会受摄入食物的影响。
食物无法改变体液酸碱度
【传言】“人体有酸碱度,食物也有酸碱性,所以多吃碱性食物就可以形成碱性体质”,“多吃碱性食物使血液中乳酸、尿素等酸性物质减少,并能防止其在血管壁上沉积,因而有软化血管的作用”……
【求证】王桂侠:食物本身是酸性或碱性,并不代表摄入体内经代谢后的产物的PH值是一定的。人体是由各个器官、组织组成的一部精密“机器”,主要通过血液的缓冲系统及肾脏和肺脏的调节使体内的PH值维持在正常范围内。血液中含有碳酸氢盐、磷酸盐、血浆蛋白等几大缓冲系统,进入血液的酸碱性物质不会引起其pH值急剧变化;肾不断控制和调整酸性和碱性物质排出量的比例,以保持机体pH值恒定;肺通过调整气体排出量来调节酸碱平衡。因此,仅仅依靠饮食的酸碱性等外界因素是很难改变人体内酸碱度的。
刘雅娟:人体的消化系统、排泄系统、呼吸系统等共同调节机体的酸碱平衡,正常人体内的酸碱永远处于动态平衡状态。不同器官处在不同的酸碱环境,如血液一般处于弱碱性环境,而胃内则是酸性环境,胃里含有0.2%-0.4%的盐酸,无论什么食物到胃里都变成酸性,到了肠道又变成碱性,酸碱度不同的食物根本无法改变人体的酸碱度。
多吃碱性食物可能影响健康
【传言】碱性食物意味着营养、安全,为了身体健康,要摒弃酸性食物。
【求证】刘雅娟:各类食物对健康各有作用,产生作用依靠的是其中的营养物质,而绝非其酸碱度。“呈酸性食物”并非不如“呈碱性食物”,如谷类,富含碳水化合物,是我们每天必不可少的主食;肉、蛋类,是我们摄取优质蛋白的主要来源;植物油能提供必需的不饱和脂肪酸,也是体内脂溶性维生素(维生素A、D、E、K)吸收的重要介质。
靠吃碱性食物、饮用弱碱性水、口服碱性保健品等方法来试图将所谓的“酸性体质”变为“碱性体质”是不靠谱的。别说碱性食物和水,即使天天吃碱,也很难改变身体的酸碱度。另外,摄入过多的碱性食物,还会出现中和胃酸、增加肾脏负担等副作用,对人体健康反而有害。
张焱:中医认为,保持身体健康需要均衡饮食。饮食不节是导致疾病发生的主要原因之一。《黄帝内经》指出:“饮食自倍,肠胃乃伤”,就是说暴饮暴食等饮食不节能够直接损害健康,进而引发疾病。所以,无论是网络热传的“酸碱性食品”,还是中医学上划分的寒热食品,不管有何功效,人们在日常生活中对待各种各样的食物都要把握好一个度,如果超过适宜的限度就可能产生不利的影响,直接危害人的健康,所以从中医学角度也提倡合理膳食,均衡营养。
王桂侠:这是一个伪命题。若是患有慢性萎缩性胃炎的患者,原本胃酸分泌就过少,如果再推崇“碱性食物健康论”而摄入过多的碱性食物、饮用弱碱性水等,势必会影响营养物质的吸收,还可能损伤胃黏膜,加重病情。
均衡饮食才是王道
【求证】王桂侠:我们提倡平衡饮食,避免过多地进食高脂肪、高热量等食物,不是因为这类食物是“酸性”,而是因为过量进食这类食物容易造成饱和脂肪酸、胆固醇等摄入超量,使矿物质、维生素及膳食纤维摄入不足,导致超重或肥胖,从而增加心脑血管疾病及糖尿病的发病风险。摒弃“酸性食品”,一味追求“碱性食品”,只会导致营养摄入的不均衡。合理饮食,戒烟限酒,运动锻炼才是正确的养生保健理念。
张焱:在中医经典典籍《黄帝内经》中,有许多关于日常健康饮食方面的论述,其中提出了“谷肉果菜,食养尽之”的饮食养生原则。意思是说,在日常生活的饮食方面及对疾病的食疗调养过程中,根据不同天时季节、不同地域人群、不同体质状况与疾病种类等具体情况,按照因时、因地、因人的“三因制宜”原则,将谷、肉、果、菜四者进行合理搭配,调和运用,才能不断地滋补人体的精气津血,使气血阴阳保持平衡协调状态,真正实现“吃出健康”。
中医认为,无论药物,还是食物,都有分酸、苦、甘、辛、咸五味和寒、热、温、凉之性,食用时都要做到五味调和、寒温适中,讲究合理搭配,不能因为哪一种甚或哪一类食物具有某方面的特殊功效而忽略其他食物的进食。如果体内有痰湿或有湿热,或属于有阴虚内热的人,平时就要尽量少食肉类甜点类等高脂高热食物;而身体属于阳虚或气虚的人,日常饮食中可适当增加一些如羊肉、大枣等温热性的食物。
